I had to read the sign twice- $1.00! When the last time you had a healthy meal for $1? I happily picked my two pounds of pears (for those curious, that was three pears). As I dropped my produce on the scale, my eyes caught the $1.29 bag of sweet potatoes sigh. Seriously, could we talk about delicious cheap eats? Bon Appetit
- 1 pound of sweet potatoes
- 2 pears
- 1 red bell pepper
- 4 cups of chicken stock
- ½ cup of basil
- 1 jalapeno
- 4 cloves of garlic
- 1 cup of milk
- Herb n farm NW Pike Place Herbs
- 1carrot
Directions: Peel and slice pear. Drizzle with olive oil and salt, roast 20 minutes until slightly caramelized. Place red pepper and sweet potatoes on tray and roast. Bake at 400° for 30-40 minutes or until tender. Place in bowl with lid and let steam for five minutes, and the skin will remove like magic. In a food processor add onion, garlic, and carrot. Then add to Dutch oven with a bit of olive oil. Add the garlic, ginger, and Herb’ Farm NW: Pike Place Herbs; cook one minute longer. Stir in the broth, pears, bell pepper, sweet potatoes, and second pear (cubed). Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Add milk and basil. Use an immersion blender to blend until smooth. Soup can be eaten warm or at room temperature, garnish with a few thin slices of pear.
