
The text read “Bringing a friend home- what’s for dinner?” I took a quick at the island, peeped in the pantry, and looked in the fridge. I saw mushrooms that needed to be used, defrosted meatballs, and a half a jar of pasta sauce. I texted back “spaghetti.” My phone ping I read “spaghetti like REAL spaghetti?” I had to laugh as the kid knew me well. I texted back “free home cooked meal – end of this discussion.” Bon Appétit.
- 4-5mushrooms
- 6 green onions
- ½ box of fettuccine
- 2 tablespoons of butter
- 3 garlic cloves
- 1 red bell pepper
- 1 small handful of basil
- 2 Roma tomatoes
- 1/2 C white wine
- 1/2 jar Classico white sauce
- HerbnFarm NW Pike Place Herbs
- Meatballs
Preparation: Prepare meatballs as directed. Cook pasta as directed. Dice two green onions and a clove of garlic and place in pan with butter. Slice mushrooms and add to pan. Sprinkle in HerbnFarm NW Pike Place Herbs and sauté 3-5 minutes. Now this is real life and I had less than a half jar of pasta sauce (maybe the kid knew that, hence the snarky text). So, in a food processor pulse remaining green onions, garlic, basil, and tomatoes (this is your tomato puree); then dump this into a pot with remaining pasta sauce. Pour wine into empty pasta jar, give a few shakes, and add to sauce along with tomato puree. Drain the pasta and add to sautéed mushrooms. Add sauce, cheese, and meatballs and serve.
