
I knew when I rescued my produce I wanted to elevate them beyond the bargain bin. I also knew after a long day I did not want to spend hours slow cooking collards. Luckily, this method requires less than 15 minutes. Bon Appetit
½ C poultry broth
½ onion diced
2 bags of collard greens
2 tbsp minced garlic
1 half of a bell pepper diced
2 smoked sausage
1 capful of Herb’n’ Farm NW Pike Place Herbs
½ lemon
Method: Heat oil in a large sauté pan over medium heat. Cook garlic, diced onion, and bell pepper stirring often, until fragrant, about two minutes. Add collard greens, broth, Herb’n’ Farm, and steam, covered, until greens are just tender and broth evaporates- about 10 minutes until fragrant. Squeeze in juice from one half of a lemon, add sausage, stir and cook for five more minutes.
