
Cornish Hen
2 mandarin
1 cup soy sauce
Juice of 2 mandarins
2 cloves garlic, crushed or grated
2 tablespoons grated ginger
1 lid full of Pike Place Herbs
1/4 cup cilantro, chopped
1 knob of jalapeño
Method: Add all the ingredients, except hens, to a mixing bowl and mix well. Set aside. Pour the marinade over the hens. Make sure the hen is coated well. Place the lid on the container and refrigerate for four hours, or preferably overnight. Preheat outdoor grill. Remove the hen from the marinade. Stuff cilantro and pieces of the second mandarin into the cavity of the hen. Keep the marinade for basting while baking at 350-375 degrees.
