
Did you know Cost-Plus World Market has a blog? I love them and shop there often, but I just learned this. When I clicked on a baking dish I was thinking about buying, this recipe popped up. My immediate thought was damn that looks good. Then I wondered if I can make that with my pumpkin pureeand ingredients I had on hand. Here’s my version, Bon Appetit!
- 1 box penne pasta
- 1 cup pumpkin puree
- 4 ounces goat cheese
- 4 slices of bacon
- 1 tbsp. butter
- 1 tbsp. olive oil
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 1/4 tsp rosemary
- 1 tsp sea salt
- 1/2 tsp ground black pepper
- 1/4 tsp nutmeg
- 1/8 tsp cayenne pepper
- 1/4 cup white wine
- 1/2 cup reserved pasta water
- 1 cup milk
- 1/2 cup shredded parmesan
