Fresh Bay Leaves

I was given a handful of fresh bay leaves. I’ve used dried leaves but never fresh. How long will they last in the fridge? What are some great vegan ways to use them? I can modify recipes, just need ideas on how best to use them. Thanks!

They should last a while in the fridge. Months even. And if they dry out a little, no worries! Now, the type does matter a bit. If it’s fresh, I’m guessing it’s probably California bay, which is more potent and more eucalyptus-y than bay laurel, the type that’s dried. So a little goes a long way. I include a variety of ideas in this piece, including letting the leaves infuse sauces, soups or stews. It also makes a very interesting note when added to cake.
