Mango Salsa

The weather is screaming summer, but we still must eat and I am truly trying not to cut the range on. The solution: grilled steak tacos with mango salsa!

  • 2 ripe mangos, diced
  • 1 medium red bell pepper, chopped
  • ½ cup chopped scallions
  • ¼ cup packed fresh cilantro leaves, chopped
  • 1 jalapeño, seeded and minced
  • 1 large lime, juiced
  • 1 large lemon juiced
  • 1 can black beans
  • 2 cups of pineapple
  • ⅛ to ¼ teaspoon salt, to taste

Preparation: Remove skin from the mango. Chop into bite size pieces, keeping in mind it has a pit. Dice bell pepper, jalapenos, and scallions, rinse off black beans and combine the prepared mango, pineapple bell pepper, onion, cilantro, and jalapeño. Drizzle with the juice of lemon and lime and mix well. Season to taste with salt. For best flavor, let the salsa rest for 30 minutes or longer.
