I was looking back and forth between the group, when a kid leaned into me and said, “They’re trying to decide on what to have for dinner.” I thought what an inventive way to come to a decision. It’s hot out, and the last thing any of us wants to do is to be in the kitchen forever. I took this idea home and we came up with the words “quick, healthy, and on a stick” I present you with summer kabobs.
- Mexican zucchini
- Mushrooms
- Shrimp
- tarragon
- Olive oil
- Gourmegg
Slice the zucchini in medium size rounds, slice mushrooms in half, and toss in olive oil , tarragon and seasoning. Season shrimp with tarragon and seasoning, toss in olive oil, alternate ingredients on kabobs, and grill 3-4 minutes.
