Fresh Corn Salad

3 for $1.00 was a fair deal for summer corn, and it was also a great reminder that I have not tried to best my brother’s corn salad. Not that his is bad, but this is a friendly sibling rivalry and it is my job to give you the best bite of summer. This salad screams summer garden. So, without further ado, here is my version. Bon Appetit.

Ingredients

  • 1 cucumber, diced
  • 1 can black beans, rinsed
  • 1 1/4 cups corn
  • 1 red pepper, diced
  • 1 cup cherry tomatoes (roasted)
  • 1/2 cup packed fresh cilantro, chopped
  • ½ cup fresh basil
  • 1 lime
  • 1 avocado, diced
  • Green onions
  • +3 tablespoons of O Olive Apple  cider  vinegar
  • Salt and pepper to taste

Directions : Grill corn, and remove from cob. Place the cucumber, black beans, red pepper, basil, and chopped cilantro in a bowl. Squeeze the fresh juice from the lime onto the salad and stir well. Mix in the avocado, season with salt and pepper, and add apple cider vinegar. Toss salad, add roasted tomatoes on top, and enjoy.
