
I opened the freezer to find two whole Costco Foster Farm chickens. I laughed as it is clear my spouse is not letting me live done the tale of the costly chicken. However, I too have a sense of humor and whipped up this delicious garlic chicken on none other than Valentine’s Day. Bon Appétit.
- 1 whole chicken
- 30 cloves of garlic
- 3/4 cup of butter, softened
- Juice of one lemon
- 4 sprigs rosemary
- 2 caps full of Herb Farm NW: Pike Place Herbs
- Salt and pepper, to taste
Preparation: Preheat oven to 400 degrees. In a food processor, add half of the garlic cloves and rosemary (Strip the leaves off the rosemary sprigs) and pulse. In a bowl, combine softened butter, garlic, rosemary mixture, juice of one lemon, and Herb Farm NW: Pike Place Herbs. Line a roasting pan with heavy duty aluminum foil and lay the patted-dry chicken on the foil, breast side up. Place a few garlic cloves under the skin of the chicken. Season the chicken with salt and pepper. Use your fingers to smear the butter mixture all over the chicken, under the skin, and inside the cavity. Place the remaining garlic cloves in cavity of the bird (if they’ll fit!). Place the chicken into the oven and roast it for 1 hour, 15 minutes or until done (baste every 25 minutes with garlic juices). Skin should be deep golden brown, and juices should be sizzling.
