I opened the freezer to find two whole Costco Foster Farm chickens. I laughed as it is clear my spouse is not letting me live done the tale of the costly chicken. However, I too have a sense of humor and whipped up this delicious garlic chicken on none other than Valentine’s Day. Bon Appétit.
- 1 whole chicken
- 30 cloves of garlic
- 3/4 cup of butter, softened
- Juice of one lemon
- 4 sprigs rosemary
- 2 caps full of Herb Farm NW: Pike Place Herbs
- Salt and pepper, to taste
Preparation: Preheat oven to 400 degrees. In a food processor, add half of the garlic cloves and rosemary (Strip the leaves off the rosemary sprigs) and pulse. You could also view it s 3 to 4 bulbs of garlic :), but yes garlic chicken needs a hefty amount of garlic to call it garlic chicken.
