Miso Soup Return Visit

We usually steam or pan fry Trader Joe’s pot stickers. However, flipping over the bag the phrase “add to soup” caught my eye. That phrase set off my culinary imagination. Bon Appétit.

  • 1 carton of Trader Joe’s miso broth
  • 12 Trader Joe’s pot stickers
  • 1 egg
  • Quarter of a bell pepper
  • 1 half serrano pepper
  • 2 tablespoons of Thai Seasoning
  • 3 cloves of garlic
  • 1 small knob of ginger
  • 1 baby bok choy
  • ½ C. of basil
  • ½ C. fresh green beans

Preparation: In a Dutch oven, heat olive oil over medium heat. In a food processor add garlic, ginger, and bell pepper. After a quick pulse, add to Dutch oven. Cook, stirring occasionally for two to three minutes until the garlic and ginger is fragrant. Pour miso broth in pot. While broth is simmering, roughly chop green beans and cut the end of the head of bok choy. Roll the leaves together and cut into strips. Add ingredients along with a dozen pot stickers and Thai season to pot. Simmer seven to 10 minutes. Whisk in egg until soup thickens. Divide soup into bowls and top with shaved carrots
