Herb-Roasted Sweet Potatoes


When my last  Imperfect Produce box arrived and inside was a sweet potato. It looked like any other sweet potato (have you ever seen a perfect one?). It sat in my pantry until today. I had intended to make a Hasselback sweet potato, but I got caught up watching an episode of Frankie and Grace and cut right through the potato. So, it just ended up being a Herb sweet potatoe. Bon Appetit

  • 2-3 medium sweet potato
  • 3 tablespoons of softened butter
  • Juice of one lemon juice
  • 1 tablespoons of minced garlic
  • 1 tsp. thyme
  • 1 sprig of rosemary finely chopped
  • 2 tbsp. Grill Mates Brown Sugar Bourbon

Preparation: Preheat oven to 425 degrees. Wash and scrub the sweet potato. Carefully slice sweet potato. In a bowl, mix remaining ingredients and toss sweet potato in mixture. Place in a glass Pyrex dish (spray dish with cooking oil) and bake for 30 minutes, or until soft and tender in the center and crispy on the outside.

  2. We eat a lot of sweet potatoes here, principally because l had normal potatoes taken out of my diet as they didn’t like me, thank goodness this potato does however. I like the idea of herbing the potatoes up a bit to add a bit more to it. Will give this a bash.

    Suze and l are constantly making SP wedges which are awesome. It’s a shame not many people use the SP over here as much, they are truly missing out on its unique taste and flavour.

    I could in fact seeing it also working with other herbs.
