I had to read the sign twice- $1.00! One couldn’t beat that. With a quick glance at the expiration date, which was three days away, I knew my dinner problems would be easily solved over the next couple of days.
Ingredients:
- 1 clam shell of spinach
- 2 mushrooms sliced
- ½ cup pistachios
- ½ cup parmesan
- 2 hardboiled eggs
- O Olive Citrus vinegar
Mix ingredients together in a large bowl, toss on your favorite dressing. I used O Olive oil- this stuff is simply delicious. I learned about this company a few years ago when it was on Oprah’s favorite things list. The O does not stand for Oprah, it literally stands for “O” damn this is good and “O” damn how come I am just learning about it. Grab a glass of wine and enjoy.
Will definitely be giving your recipe a try, as my “Summer Perfection” spinach is still lush and thriving in the potager. We had “Korean” Spinach salad last night (similar to yours but with water chestnuts and bean sprouts added, no pistachios.) I doubt I’ll find O brand in our little rural grocery, but I can certainly make a citrus dressing. Thanks for sharing.

Your salad sounds delicious 🙂 You can find O Olive Oil online. I also have no doubt you can make a citrus dressing With a bit of orange juice, fresh lemon juice, lemon zest, shallots, Champagne vinegar and olive oil.
