Spicy Celery Soup

Now, let me admit I had a hard time typing the title of this post, because when I think of celery soup, I imagine blandness and automatically think fad diet. I promise you I am not on a diet. I have never been on one. I don’t think anyone should subject themselves to one. Instead, I believe in eating healthy and having all good things in moderation. Though, on to the point- this recipe was created after receiving our first Imperfect Produce box. My home was abuzz with what to make with the few vegetables . My spouse, who is a chef by trade, looked at the ingredients and said, “Celery Soup.” A hush fell over the kitchen as I am sure we were all thing “really”, but I swear this soup is creative, delicious, and flavorful. Bon Appétit.

  • 1 bunch celery
  • 1 red bell pepper
  • 3 carrots
  • 1 onion
  • 1 scotch bonnet
  • 3 garlic cloves minced
  • 1 cap full of Herb Farm NW: Market Fish
  • 2 caps full of Herb Farm NW: Pike Place Herbs
  • 1-pound shrimp
  • 6 C. seafood stalk
  • 4 roma tomatoes

Preparation: Mince garlic, carrots, bell pepper, scotch bonnet and place in Dutch oven with a bit of olive oil and 1 cap full of Herb Farm NW: Pike Place Herbs. Cook five minutes until fragrant. Meanwhile, chop celery and tomatoes and add with remaining cap full of Herb Farm NW: Pike Place Herbs to Dutch oven with shrimp stock let simmer 35 minutes. Then blend with an immersion blender. Season shrimp with one cap full of Herb Farm NW: Market Fish and chopped garlic, add to soup and cook six to eight minutes and serve.
