I opened the freezer to find a whole Costco Foster Farm chickens , and was inspired to create an Asian-inspired chicken. Bon Appetit!
1 whole chicken
1/4 cup butter
2 tbsp. Sesame Oil
2 tsp sesame seeds
1 medium ginger root
4 tablespoon minced garlic
2 lemons
Juice of 1 lemon
2 caps full of Herb Farm NW: Pike Place Herbs
Instructions: Preheat oven to 400 degrees. In a food processor, add ginger root (skin removed) garlic cloves and pulse. In a small saucepan , combine softened butter, sesame oil,ginger mixture, juice of one lemon, and one cap full of Herb Farm NW: Pike Place Herbs and stir until well blended. Season chicken liberally with Herb Farm NW: Pike Place Herbs.Cut the lemons in half and place the lemon halves (if they’ll fit!) into the cavity of the bird. Spread the mixture over the prepared chicken, thoroughly getting into the cavities; and place the remaining ginger and garlic inside the chicken. Salt and pepper the inside and outside of the chicken. Place the chicken into the oven and roast it for 1 hour, 15 minutes or until done. Skin should be deep golden brown and juices should be sizzling.
