
Okay, I love squash. Just type “squash” into my search engine and you will be overwhelmed by the deliciousness of squash. However, the Acorn squash and I seem to have a delayed relationship. I forget about it until one day I open the pantry and it rolls toward my feet, or the day I find it on the counter as my spouse’s silent message is “the first one home needs to tackle this”. Well, you guessed it I was the first one home (I also worked form home today, so I wonder if that counts?). Bon Appetit
- 1 acorn squash
- 1/2 cup brown sugar
- 4 tablespoons of McCormick fiery 5 spice
- 2 tables spoon Butter
Preparation: Preheat oven to 400 degrees and spray a baking sheet with cooking spray. Seed and cut acorn squash into slices. In mixing bowl add brown sugar, seasoning and butter, mix until blended. Add squash and mix until well covered. Lay squash pieces on baking sheets. Roast until squash has a nice glaze, about 20 minutes.

Yum – I think even my non-cooking self can manage this one 🙂
