
My brother had a birthday this weekend. I thought what better gift to give him then a cooked meal from a box? If you’re thinking what the hell, you need to read this post– I promise it will all make sense and make you laugh. Bon Appetit
- 1 box zatarain’s Caribbean rice
- ¼ cup Cilantro
- Olive oil
- ½ cup of orange juice
- 2 cups of coconut milk
- 1 tablespoon chopped garlic
- 1 carrot
- 1 half of bell pepper
- 1 shallot
- 1/2serrano pepper
- 1 knob of ginger
- 1 teaspoon Herb n’ Farm Herb ‘n Jerk
Preparation: In food processor add carrot, bell pepper, onion, half a serrano pepper, and ginger pulse (this is the mirepoix). In a large skillet heat olive oil and add mirepoix. Cook until fragrant, then add Caribbean rice, coconut milk, orange juice, and a pinch of herb n jerk. Bring to a boil, once boiling cook and simmer for 25 minutes. Note I didn’t add the fresh pineapple, as this surprisingly had bits of pineapple in the mix.

Verdict – I would make this again. I would, however, add a whole jalapeno pepper to cut the sweetness and if heat is not your thing, omit the orange juice and stick with just the coconut milk.
Simply mouth watering! Now I know how to make rice look exactly the same like the pic on the box… throw in extra ingredients of course… 😀 Food presented by some fast food chains look much better on TV commercials too 😛

The is the “secret”, but sometime I feel after you done all that you could have truly made if from scratch 🙂 . I stay away from fast food chains because the misrepresentation is just to much for me to handle..
