I am a believer that when a food craving calls, you answer it. The key is moderation. Today I had a serious craving for noodles. Yes, it’s still summer and you will be able to tell that if you scroll down and look at my photos. They are not the best as the sun floods my kitchen from the open windows and the skylight. I luckily remembered buying a box of Singapore Laksa Curry soup bowl at Cost Plus. The box says it serves two. Umm it does NOT and that was made clear by the one bowl that was included. I got to work turning this box meal into a real meal. Bon Appétit.

  • 1 box Singapore laksa curry
  • Rice noodles
  • Bunch basil
  • 4 cups miso broth
  • ½ cup of coconut milk
  • 1 T chopped garlic
  • Quarter of a of bell pepper
  • 1 knob of ginger
  • Shrimp

Preparation: Pour miso broth in pot, grate in fresh ginger, add garlic and bell pepper, and bring broth to a boil. Once broth is boiling add coconut milk (I did not use the coconut powder that was included), soup base, seasoning packet, and oil flavoring packet. Add noodles and an additional handful of your own rice noodles. Bring soup to boil, add shrimp, simmer for 2-3 more minutes. Ladle into bowl top with basil.

Verdict: I would buy this again for $1.99 and perhaps upgrade it with some egg as it cheaper than pho.
