Lemon Cucumbers is not new to me, but as I looked at it while sitting in its plastic crate at the farmers market attracting curious glares of a casual observer, I thought that many strolled by and probably wondered “What the hell is it? Lemon cucumber does not have a lemon taste, only color, but has a thin, tender skin with a flavor a little milder than a regular cucumber. Lemon cucumbers, botanically classified as Cucumis Sativus. I would suggest preparing them as you would any other cucumber. I decided the best way to utilize this ingredient would be raw in a charcuterie board. Have you come across Lemon Cucumbers? If so, how have you utilized them in cooking?
