I came across this huge size bag (read 3 pounds ) of broccoli at Costco and had dreams of comfort food. Bon Appetit!
- 1 whole onion, diced
- 1 stick butter
- 1/3 cup flour
- 4 cups whole milk
- 4 heads broccoli cut into florets (half of a costco bag)
- 3 cups grated cheddar cheese
- herb farm
- lawrys seasoning salt
- Freshly Ground Black Pepper
Preparation: Melt butter in a pot over medium heat, then add the onions. Cook the onions for three to four minutes, then sprinkle the flour over the top. Stir to combine and cook for one minute or so, then pour in milk. Add herb farm then add broccoli and plenty of black pepper. Cover and reduce heat to low. Simmer for 20 to 30 minutes, or until the broccoli is tender. Stir in two cups cheese and allow to melt. Taste seasonings and adjust if needed. Then add half cup of cheese. Puree completely and add remaining half cup cheese. This will make it extra cheesy- trust me, just look at the cheese dripping from the spoon below.
