What’s Next

We’re going to see an awful lot of independent restaurants close. There’s going to be hand-wringing, followed by a burst of creativity in two or three years, when the rents are cheaper. There’s a young energy out there, looking at the whole landscape, going ‘We need to change this.’ It’s time, you know? It’s time for the kind of abuse that happened in restaurants to end, including the disparity between what the front and back of the house make. That will all be reconsidered and we will come up with a new American model of how to run a restaurant in an equitable way. That can only be a good thing.” – Ruth Reichl
