This morning when I returned from my run, my spouse was already gone. I knew I was in for at least a 12 hour day. With that in mind, dinner needed to be good and quick tonight. Looking at all the containers in the fridge, I dreamt of leftovers. What’s your go to meal after a long hard day? I am not a fan of fast food or cereal at night. They both make me feel that I have either been cheated out of my money or time. That evening my spouse pulled out containers not one was a complete meal. We found ourselves in a lightening round of Chopped. Bon Appetit.
- Leftover pasta
- Half an English cucumber marinated in rice vinegar
- 1 tablespoon minced garlic
- Half of a bell pepper
- Sesame oil
- Sesame seeds
Preparation: Cut bell pepper in commas. Sautee in a little sesame oil and sprinkle bell peppers with sesame seeds. Drain cucumbers (I just pour the rice vinegar back into the bottle), add ingredients to pasta, and toss.
Real life tip: when you make pasta, always cook the whole box. The extra will save you later in the week.
That’s quite creative. I tend to freeze leftovers as a meal in itself- casserole style. Keeping the pantry stocked with rice or pasta helps too – you can toss them with just about anything.

That looks yummy, you didn’t mention the meat. I eat a big bowl of cereal late every day. I prefer Quaker’s offerings. Life, Oatmeal Squares, and their new Medleys. I will have to try keeping cooked pasta at the ready, that opens up a plethora of options.

The meat was not mention as it just Costco marinated pork nothing to it but to place in a tad of oil and cook to your liking😋. Thanks for sharing your quick go to meals.

My new roommate loves Costco, we’re just running out of room to store things. I prefer a more European style of shopping 🛒

I love Costco, and blessed to have a walk in pantry , but both shopping methods have pros and cons as I’m sure you know😊
